Sultana, Apricot and Cornflake Biscuits 

While visiting my Aunty, I tried a biscuit she had brought at a local supermarket that was so yum that I wanted to see if I could recreate them at home. So I came up with these, they are crunchy and delicious. A great recipe that all the family will enjoy. These biscuits go well with a cup of tea or coffee, a lunchbox idea or just as a great snack.

Measure out the dried fruits.

Cream the butter and sugar until light and fluffy.

Add the vanilla extract and Egg and beat well to combine.

Add flour and mix until a dough forms. Add the dried fruits and mix until evenly spread throughout the dough.

Roll a spoonful’s of dough in cornflakes and place on a lined baking tray.

Bake biscuits in the oven until golden.


Sultana, Apricot and Cornflake Biscuits

125g butter, softened

1/3 cup sugar

1 egg

1 tsp vanilla extract

1 cup self raising flour

1/3 cup sultanas

1/3 cup diced dried apricots

2 cups cornflakes

Preheat the oven to 180c.

Add the butter and sugar to a stand mixer fitted with a paddle attachment. Turn mixer to high and cream the butter and sugar together until light and fluffy.

Add the vanilla and egg and beat well to combine. It may look split but will come together once you add the flour.

Add flour and mix well to combine.

Finally add the apricots and sultanas and mix until the fruit is evenly mixed throughout the dough.

Add cornflakes to a large mixing bowl and gently crush. Take a spoonful of mixture and roll into a ball, drop the ball into the cornflakes and roll until completely covered in cornflakes. Gently squash the ball a little bit and place on a baking tray lined with baking paper. Repeat with the remaining dough and space out the dough on the baking tray to leave room for them to spread out slightly while cooking.

Bake in the oven for 15 minutes or until golden brown.

Remove tray from the oven and leave the biscuits to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

Store in an air tight container.
