These are delicious golden and crunchy morsels of awesomeness. They are easy and quick to make at home and go well by themselves or as a side or on a burger. They are versatile and won’t last long as the are soooooo good.
Cut onion into slices.
Separate the onion slices into separate rings.
Add onions to a bowl and cover with buttermilk.
Mix the beer and half the flour in a bowl until you have a smooth batter.
Remove onion rings from buttermilk and dust in flour, then dunk in the batter.
Add to the oil in batches and cook until golden.
Beer Battered Onion Rings
2 onions, peeled
2 cups buttermilk
1 cup flour + 1 cup flour
250mls beer
1 tsp salt + extra to season
Preheat a deep fryer or a saucepan filled halfway with oil to 160c.
Cut onions into 1cm thick slices and carefully separate each slice into individual rings, discarding the small rings.
Add onions to a bowl and cover with buttermilk and let sit for 10 minutes while making the batter.
To make batter, add 1 cup of flour to a medium mixing bowl and whisk in the beer until smooth. You should be left with a thick batter with no lumps. Whisk in the salt.
Add the remaining 1 cup of flour to a separate bowl. In batches, remove the onion rings from the buttermilk and toss in the flour. Then dunk onion rings in the batter until well covered and then carefully add to the oil and fry for 2-3 minutes or until golden and crispy, turning halfway through. Remove from the oil and drain on a plate lined with paper towels. Repeat with remaining onion rings.
Season with salt and serve with tomato sauce, aioli or any other condiment you like. They are delicious by themselves or work well on a burger.
