This tastes so much better than the brought stuff and all the effort is definitely worth it. This butter makes the most amazing garlic bread. It also works well with a beautiful piece of steak or seafood. Give it a go and try it in one of your recipes and you won’t be wanting to buy any ever again.
Roast garlic in a oven until soft.
Over whip the cream until the liquid separates from the solids.
Wash the butter in water until the water is clear and strain.
Squeeze in the garlic and mix well. Add the salt and parsley and mix well to combine.
Roasted Garlic Homemade Butter
3 heads of garlic
250ml cream
1 tsp salt
¼ cup parsley, finely chopped
Preheat oven to 200c. Place garlic heads into the middle of a medium piece of tin foil and drizzle with a little olive oil. Wrap up the garlic into a small parcel. Place in the oven and roast in the oven for 45 minutes or until soft. Remove from the oven and leave to cool.
Pour cream into a medium bowl and whisk with an electric mixer or whisk by hand until you over whip the cream and the liquid separates from the solids. Strain through a sieve, discarding the liquid and pour solids back into the bowl. Add ¼ cup water and using a spatula, mix the butter, then strain through a sieve and keep repeating until the water is no longer cloudy. Using the spatula, press the butter until it releases as much water as possible and discard the water.
Squeeze out the cooled garlic using your hands into the butter and mix well until the roasted butter is well combined with the butter. Add the parsley and salt and mix well to combine. Add to a air tight container and store in the fridge.
Makes great garlic bread as shown above or works well with seafood, steak and chicken.
