Cauliflower rice is not only a healthy option but a very tasty one too. I eat a lot of cauliflower as it’s alow carb option to rice. In this recipe you don’t miss the rice at all and as its roasted it doesn’t have a strong taste so good for people who aren’t that fussed on cauliflower. Adding all the extra vegetables just makes this even more healthier and adds even more depth of flavour. Give it a go its great with dinner or as a vegetarian option for lunch. So who’s cooking dinner?
Use a food processor and pulse florets until they reassembles rice.
Tip rice out onto a baking tray and roast in the oven until golden.
Finely dice all the vegetables and cook until they have softened.
Mix the vegetables with the cauliflower rice and truffle oil.
Roasted Cauliflower Rice Salad

½ head of cauliflower, cut into medium sized florets
1 red onion, finely diced
¼ red capsicum, finely diced
½ carrot, peeled and finely diced
2 small flat mushrooms, finely diced
¼ broccoli, cut into mini florets
1 tsp truffle oil
Salt and pepper, to taste
Preheat the oven to 200c.
Add the cauliflower florets into a food processor and pulse until the cauliflower is finely chopped and reassembles rice.
Line a baking tray with baking paper and spray with oil. Tip the cauliflower rice onto the baking tray and spread out into one even layer.
Roast in the oven for 20 minutes or until golden brown, giving it a toss halfway through to prevent the rice from burning and to achieve an even golden brown through out. Remove from the oven and place cauliflower rice in a bowl and set aside to cool.
Meanwhile add the onion, capsicum, carrot, mushrooms and broccoli to a medium frying pan with 1 tbsp of olive oil. Place over a medium heat and cook until the vegetables have softened and onions are translucent but have no colour stirring occasionally, about 10 minutes. Remove from the heat and set aside in a bowl to cool.
Once the vegetables have cooled, add them to the cauliflower rice and mix gently until combined. Add in the truffle oil and mix again gently until combined. Season to taste and serve.
