This is so gooooood. Raspberries are one of my favourite berries and there is no mistaking what flavour this sorbet is as it has an intense raspberry flavour and that colour is amazing. This is a super easy recipe to make and is perfect to make as the weather starts to get warmer. Very refreshing.
Add glucose, water and sugar to a saucepan and bring to the boil.
Add raspberries, lime juice and sugar syrup to a food processor and blitz until smooth.
Pass through a sieve to remove all of the seeds.
Add to an ice cream machine and churn or add to a container and put in the freezer and mix well every half hour or so.
Then add to the freezer and leave to firm up.
Raspberry Sorbet
100g sugar
125g water
1 tbsp glucose
500g frozen Raspberries
Juice of 1 lime
Add sugar, water and glucose to a saucepan.
Place over a high heat and bring to the boil.
Boil for 5 minutes, then remove from the heat.
Add frozen raspberries into a food processor and squeeze in the lime juice. Add the sugar syrup and bitz until smooth.
Pass through a sieve to remove the seeds.
Add to an ice cream machine and churn according to the machines instructions or pour into a container and mix well every half hour or so.
Pour into a tub and place in the freezer until firm.
