Everybody knows and loves popcorn chicken and chicken nuggets but most of us wouldn’t think of making a vegetarian option. We’ll I did and this what I came up with. They are super tasty and delicious and are a great alternative to meat or if you just want a healthy snack.
Cut cauliflower into medium sized florets.
Set up crumbling Station, starting with flour, followed by egg and lastly the breadcrumb mixture.
Roll the florets in flour, then egg and lastly the breadcrumbs until evenly coated.Cook until golden and crunchy.
Popcorn Cauliflower
1 head of cauliflower
1 cup panko breadcrumbs
1 cup finely grated parmesan cheese
2 tbsp paprika
2 tbsp dried thyme
2 tbsp salt
2 tbsp pepper
2 tbsp garlic powder
2 tbsp onion powder
1 tbsp truffle powder
1 tbsp dried basil
1 cup rice flour
2 eggs
Cut the cauliflower into medium sized florets and set aside in a bowl.
In a medium mixing bowl, mix together the breadcrumbs, parmesan, paprika, thyme, salt, pepper, garlic powder, onion powder, truffle powder and basil. Set aside until needed.
In a separate bowl, whisk the eggs gently to combine and set aside.
In a third bowl, add the rice flour and set side.
Set up a crumbing station by lining the bowls up in order, starting with the flour, then egg followed by the breadcrumb mixture.
Take cauliflower florets and roll in flour, followed by the egg and then lastly the breadcrumbs until all the florets are evenly coated. Place on a lined plate and set aside until oil is hot.
Heat oil to 180c and cook florets in batches until golden brown, about 4 minutes or in an air fryer on dual setting or 180c for 20 minutes or until golden and crispy.
Season with a sprinkle of salt and serve with some aioli or as part of your main.
